Sand and seal/varnish wooden kitchen benchtops

Wooden benchtops in kitchen (18mths old from Ikea) are not properly sealed and near sink is starting to show some black spots. We want to have it sanded back and seal/varnish properly so it is waterproofed and protected better.
Main U shape kitchen includes ; 250x70 benchtop, 170x60 benchtop with sink cut out and 170x60 benchtop with stove cut out. There are 3 extra benchtops not connected to this which also need doing; 200x43, 85x39 and 60x43.
